Dried Fruits & Nuts Salad with Veggies

This salad is so easy to make with only a few basic ingredients. It’s delicious and the cashew dressing can be used as a dip too. Vegetables like carrot, cucumber & cabbage is high in fibre, protein, Vitamin A, C, K, Calcium and Potassium. Where cashews are packed with vitamins, minerals, good fats and antioxidants. Most importantly cashews can lower your risk for cardiovascular disease by raising good cholesterol. It regulates blood pressure level as well.

Ingredients:

  • Cabbage
  • Carrot
  • Cucumber
  • Yellow bell pepper
  • Red bell pepper
  • Capsicum
  • Cashew Dressing

Top it up with:

  • Figs – 2 (cut into small pieces)
  • Black Raisins (3-4)

Cashew dressing Recipe:

  • Cashews soaked for around 6 hrs
  • Bellpeper – red
  • Date 1
  • Lemon
  • Pink salt
  • Green Chilli as per taste
  • Water

Combine the above ingredients in a blender and your dressing is ready.
