Cashew Dressing Salad which is super healthy & tasty

This salad is so easy to make with only a few basic ingredients. It’s delicious and the cashew dressing can be used as a dip too. Vegetables like carrot, cucumber & cabbage is high in fibre, protein, Vitamin A, C, K, Calcium and Potassium. Where cashews are packed with vitamins, minerals, good fats and antioxidants. Most importantly cashews can lower your risk for cardiovascular disease by raising good cholesterol. It regulates blood pressure level as well.

Ingredients:

Cashew Dressing Recipe
1 cup overnight soaked cashews
1/2 cup curd
2tsp mustard oil
1 garlic clove
1 green chilli (as per your taste, can be skipped)
1tsp Lemon juice
Pink salt

Combine the above ingredients in a blender and your dressing is ready.

Mix the cashew dressing with grated carrot, cucumber & cabbage. Top it up pomegranate and a pinch of black pepper.
