Sol Kadhi or Kokum Drink

Sol kadhi is a popular and healthy drink which is usually consumed after meals. Belonging to the Konkan region, it uses kokum fruit, coconut milk, cumin seeds and green chillies, which gives it a lovely taste. Sol kadhi is known not just for its taste but also for the several health benefits.
Sol kadhi contains healing properties, antioxidants and anthocyanins.
Sol kadhi can improve digestion too. It relieves all kinds of digestive problems and cleanses your system entirely. Sol kadhi helps in regulating absorption of food; prevent your body from heartburn, indigestion, gas, cramps, constipation, diarrhea and abdominal pain.
Kokum is known to promote weight loss by curbing appetite.
Ingredients:
* 12 Kokum (Malabar Tamarind)
* 1 cup Fresh coconut grated
* 1 Green Chilli
* 2 cloves Garlic
* 2 tablespoon Coriander (Dhania) Leaves for garnish
* 1/2 teaspoon Cumin powder (Jeera)
* Pink Salt (as per taste)
* Kurry Leaves (2-3)
Begin by soaking the kokum in a bowl full of water for an hour. Squeeze the pods to extract the juices, drain the pods and retain the water with the extract in it.
In a mixer-grinder, blend together the freshly grated coconut with enough water to make a smooth paste. Strain the paste through a fine sieve to extract fresh coconut milk from it. Repeat this process twice.
Now combine the extracted milk, kokum concentrate, crushed garlic, kurry leaves, cumin powder, green chilli and stir well in a mixer. This will add taste to the drink.
Once the flavours have seeped in, you can add salt.

Taste it and adjust seasoning as required. Garnish the Solkadhi with coriander or mint leaves and serve chilled.
